The wind is still crazy howling cold! But inside my cozy warm house, it's time for something comforting, like Chocolate Chunk Cupcakes. Chocolate elevates the endorphins which elevates your mood AND is good for us. But I'm not in the mood to spend hours in the kitchen, so I'll make these using a chocolate cake mix. That's right! A cake mix. It just takes a few minutes to stir up, bake and, Voila!, they will be ready to eat, gooey warm chocolate cupcakes right out of the oven. And by the way, they keep well for days...is they last that long! Stay warm, cozy and enjoy this special treat!
Chocolate Chunk Cupcakes
Oven 375. Line 24 cupcake tins with paper liners. Spray the liners.
In a large bowl mix:
1 package chocolate cake mix
5 tablespoons instant chocolate pudding mix
1/2 teaspoon espresso powder
Make a well in the center and add:
3 large eggs
1 cup sour cream
1/2 cup vegetable oil.
Stir together until combined.
Add:
2 cups chopped chocolate chunks
Fill the muffin cups, pressing 2-3 chunks on top.
Bake 16-20 minutes. Cool and dust with powdered sugar.
