Several years ago I traveled to Amsterdam at Christmas time. It became one of my favorite places to visit. Sinter Klaus arrives Dec. 6th on St. Nicholas Day and is welcomed by young and old alike, shops and offices closed as everyone comes out to greet him as he rides through the city on his great white horse. Bakery windows display large speculaas , a spicy crisp cookie in the shape of St.Nicolas, boats on the canals sell juniper and pine bouquets that fill the air with their scent and everywhere, everyone is hurrying about on their bicycles, little everygreen trees attached to the back. It is a wonderland. Sinter Klaus, as he is known in Amersterdam, later became our American Santa Claus when immigrants from the Netherlands came to America, landing in New York, New Amsterdam, where others heard about their customs and started calling Sinter Kluas, Santa Claus. My visit that year inspired this very authentic version of Sinter Klaus.
